It's all about the filling



Quick Vegan Taco filling:

I just LOVE Tacos! You can make the filling the night before, they are quick to make, cheap, and can be customizable for each individual. 

(A quick little lesson) Why I don't use ground beef in my tacos...
Roughly 70% of the ground beef you buy in your local supermarket contains "pink slime" . Pink slime was once ONLY used in canned dog foods. The “pink slime” is made by gathering waste trimmings, simmering them at low heat so the fat separates easily from the muscle, and spinning the trimmings using a centrifuge to complete the separation. Next, the mixture is sent through pipes where it is sprayed with ammonia gas to kill bacteria. The process is completed by packaging the meat into bricks. Then, it is frozen and shipped to grocery stores and meat packers, where it is added to most ground beef. Pink slime is not required to be on any food labels due to the fact that the USDA labels it as meat. (info from ABC news website Mar 7, 2012 7:52pm)

Also why should you make your own tacos at home? Even if you use actual meat it is much cheaper and much healthier to make them yourselves then running down the street to a local taco joint. Also you know what is in your tacos. Did you know that roughly only 36% of beef is in Taco Bells beef taco filling. The other 64% is additives, and fillers.  (info from the LA times)

After that bit of info who's ready to make some tacos? *insert laughter* I'm not here to try and make anyone a vegan or vegetarian by any means. Nor do I look at anyone differently by how they eat. You can take the info I give you however you want. I just want to give you a little education and more of a reason as to why I eat the way I do. Maybe you will go and do your own research into what you eat, if its plant based, or meat based. I believe it is always good to know where your food comes from and how its made/grown. So on that note let's get cooking! 

What you need:

1/2 Onion
1/2 container of Mushrooms
1/2 can of green chilies
1 cup water
1/2 lb. Tempeh
1/2 Pack taco seasoning (or your own seasonings)
Corn Taco shells (you can cut out the extra carbs and make into a taco salad if wanted)



The how to:

Dice the Onion, Garlic, Tempeh, and your cleaned Mushrooms



Place water in a large pan and set to high. Once the water starts to steam bring down the heat to medium/high.

Place the diced onion, garlic, tempeh, mushrooms, and green chilies into the pan, add in 1/2 a pack of taco seasoning and stir. 



Cover the pan bring your heat down to a low simmer  and cook for about 15-20min until the onion is nice and soft.  Stirring about every 5minnutes. 

Once the onion is nice and soft you are ready to build your tacos. 

You can build your taco any way you like by adding any items you love to place in a taco shell. 
We pared our tacos with a vegan cornbread. 


What we used:

Vegan Daiya cheddar cheese
Vegan refried beans
Avocado
Salsa
Corn
Lettuce

Or you can make this into a burrito or a taco salad by using Tortilla chips. Hope everyone enjoys this protein packed taco filling. Happy Cooking.
