Flavorful Bowl of LOVE



Coconut Curry Carrot Soup

(vegan friendly)


What you will need:

2 Cups Vegetable broth
1 lb. Carrots
1 Tbs. Olive oil
2 Tsp. Curry Powder
1 Garlic clove
½ Medium Onion
1 Cup Canned Coconut Milk
¼ Cup Basil
Salt and Pepper to taste



Materials needed:

Knife, Cutting board, Blender/food processor, Medium size pot, Frying pan, Peeler



Put the 2 cups of vegetable broth in your medium size pan and set it to medium high. Peel and cut your carrots, place in the vegetable broth. Once it starts to boil turn heat down some to keep it at a soft boil.

While your carrots are boiling put the olive oil, diced garlic clove, and curry into the pan on medium heat. Move around a bit so the curry is well combining with the oil.  



 Dice the onion while the oil mixture heats up then place into hot pan. Turn down heat a little and simmer until onion is nice and soft/translucent.  

                                           To easily Dice an onion make slices an 1/4 inch away from the                                                              connected end of the onion (so onion stays together)

Then Turn onion and slice the other way, this makes uniform diced pieces easily

 Once the onion is soft, put the onion curry mixture into the pot with the vegetable broth and carrots. Boil until the carrots are nice and soft, roughly 15-20 minutes. 

I placed a lid onto my pot while the mixture simmered for 20min.


Once the carrots are soft, place the whole mixture into the blender/food processor and slowly blend until everything is well combined and smooth.

Slowly add the coconut milk with blender/food processor blending on the lowest setting.



 Once the mixture is well combined, blend until smooth add the soup back into the pot. Reheat and add the chopped basil. 

                                                        I just used my fingers to rip up the Basil into pieces.                                                           Good task for a little one to do, after they wash their hands


Once the mixture is nice and hot, then its ready to be served. This soup keeps well in a sealed container in the fridge for about a week. The recipe makes roughly 3 servings but is so delicious I would suggest doubling this recipe.

This would even go well over some rice for a more filling dinner. I paired mine with a salad that night and was very satisfied. Hope you enjoy this delicious soup and Happy Cooking!
